to change a valve gasket, I need to cut hot water.

how to cut hot water?

I followed the pipes, and here is a picture of what could be the faucet Hot water:

Is this one of the elements the picture corresponding to the command to shut off the hot water?

this is not no hot water but the security group connected to cold water.

if you do not have a shutoff valve on hot water, turn off the cold water, open a faucet to release pressure and will change the seal on your other faucet
